White Chocolate Cranberry Crack

I love the combination of salty and sweet in a dessert. This White Chocolate Cranberry crack provides just that. It has a the sweetness of white chocolate, combined with the saltiness of the crackers and nuts. It reminds me of one of my favorite sugar cookie recipes. This recipe is very simple to make and it stores really well in an airtight container. Fair warning, they are very addicting! Here are the main ingredients in this recipe:

The White Chocolate Cranberry Crack Base

This recipe starts out like any other Christmas crack recipe. After lining a 15.5 x 10.5 sized pan with foil, you place your crackers evenly on the pan.

Next, you will need to make the “caramel” layer. This is not a true caramel so there’s no need to break out the candy thermometer. All you have to do is combine the butter and brown sugar in a saucepan and bring to a quick boil. It will darken and thicken slightly. Be sure to stir it frequently so that it doesn’t burn! Once it has cooked, carefully poor it over the crackers and pop it in the oven to finish thickening.

Once you have removed it from the oven, sprinkle the white chips over the caramel mixture. It will need to return to the oven for one more minute so that the chocolate can melt enough to spread.

The Toppings

Now its time to add some toppings. I just love white chocolate and cranberry together! Sprinkle your craisins evenly over the white chocolate, followed by the pecans.

Now all you have to do is wait patiently until it cools and sets up so that you can cut, or “crack” it into pieces. Its well worth the wait! This white chocolate cranberry crack is sure to become a holiday favorite!  Happy baking!

 

White Chocolate Cranberry Crack

Deliciously sweet white chocolate combined with tart craisins and salty pecans.

Ingredients

  • saltine crackers about 40 crackers
  • 1 cup butter
  • 1 cup brown sugar
  • 1/2 tsp vanilla
  • 1 bag white baking chips
  • 1 ½ cups craisins
  • ¾ cup chopped pecans

Instructions

  • Preheat oven to 350°
  • Line a 15 ½ x 10 ½ jelly roll pan with foil and spray with cooking spray
  • Arrange crackers in a single layer
  • In a medium saucepan over medium heat, combine butter and brown sugar
  • Heat to boiling, stirring frequently
  • Reduce heat and simmer 5 minutes
  • Remove from heat and stir in vanilla
  • Carefully pour the mixture over the saltine crackers. Spread to cover.
  • Place the pan in the oven and bake for 4-6 minutes until slightly browned and bubbly
  • Remove from oven and sprinkle with white baking chips
  • Place back in the oven for one minute
  • Remove from oven and carefully spread the white chips evenly to cover
  • Sprinkle with craisins and pecans
  • Cool completely before cutting. Store in airtight container.
