Preheat oven to 350°
Line a 15 ½ x 10 ½ jelly roll pan with foil and spray with cooking spray
Arrange crackers in a single layer
In a medium saucepan over medium heat, combine butter and brown sugar
Heat to boiling, stirring frequently
Reduce heat and simmer 5 minutes
Remove from heat and stir in vanilla
Carefully pour the mixture over the saltine crackers. Spread to cover.
Place the pan in the oven and bake for 4-6 minutes until slightly browned and bubbly
Remove from oven and sprinkle with white baking chips
Place back in the oven for one minute
Remove from oven and carefully spread the white chips evenly to cover
Sprinkle with craisins and pecans
Cool completely before cutting. Store in airtight container.
