Gingerbread Magic Cookie Bars

I love the smell of cookies baking in the oven this time of year. Even more so, I love the warm smells of cinnamon and gingerbread filling the house. Traditional 7 layer or magic cookie bars combine chocolate, butterscotch, walnuts and coconut atop a graham cracker crust. To mix things up a bit, I decided to give these cookies a few new ingredients.

Crust

Rather than using a graham cracker crust, I opted for crushed ginger snaps. They give these gingerbread magic cookie bars a unique flavor. You can find them in most grocery stores. It does add a little more prep time than using a box of graham cracker crumbs, but it’s worth it!

The Gingerbread Magic Cookie Bar Layers

Just like traditional 7 layer cookie, this one also has 7 layers. Once your crust has baked and cooled, simply add the remaining ingredients (minus the condensed milk) in even layers. You can put them in any order that you choose. I did white baking chips, cinnamon chips, nuts and then coconut. Before baking, drizzle the entire contents of the sweetened condense milk evenly over the top of the gingerbread cookie bars.

Baking

Because oven temperatures and cooking time can vary, you should keep an eye on these while they bake. There is really nothing that needs to “cook” so you are just looking for it to be brown and bubbly around the edges. Once it is done, it needs to cool completely on a wire rack before slicing. Not only do these magic cookie bars smell amazing when they are baking, but they taste amazing too!

Gingerbread Magic Cookie Bars

Traditional 7 layer cookie bars get an upgrade using the warm flavors of ginger snaps and cinnamon chips.

Ingredients

  • 2 cups ground ginger snap cookies about 42 cookies
  • ½ c butter melted
  • ½ c chopped pecans
  • 1 c shredded coconut
  • 1 11 oz white baking chips
  • 1 10 oz cinnamon baking chips
  • 1 14 oz sweetened condensed milk

Instructions

  • Preheat oven to 350°
  • Place cookies in food processor and grind until fine crumbs
  • In a medium sized bowl, combine crumbs with melted butter
  • Press the crumb mixture into the bottom of a greased 9x13 pan
  • Layer remaining ingredients (white chips, cinnamon chips, pecans and coconut)
  • Drizzle sweetened condensed milk evenly over the top
  • Bake for 25 to 35 minutes or until sides are slightly browned and bubbly
  • Cool completely before cutting into bars. Store in airtight container.
