Sweet and Spicy Pork Chops

Ingredients

  • 4 boneless pork chops
  • 1 tbsp olive oil
  • 2 tsp minced garlic
  • 2 tbsp butter
  • 1 tsp ginger paste
  • 2 tbsp apricot preserves
  • 2 tsp soy sauce
  • c water
  • 2 tsp sriracha
  • salt and pepper to taste

Instructions

  • Preheat olive oil in a large cast iron or non-stick skillet over medium high heat.
  • Pat pork chops dry with paper towels and season liberally with salt and pepper on both sides.
  • Place pork chops in pan and cook about 3-5 minutes per side, or until browned and cooked through. Keep warm.
  • Remove pan from heat and rinse (optional)
  • Return pan to heat and add another drizzle of olive oil over medium heat.
  • Add garlic and ginger, and cook until fragrant (about 30 seconds).
  • Add water, jam and soy sauce. Simmer until the sauce has thickened (3-5 minutes).
  • Turn off heat and add the butter and sriracha.
  • Return the pork to the pan and coat with the sauce.
  • Serve immediately with an extra drizzle of sauce if desired.
