Preheat olive oil in a large cast iron or non-stick skillet over medium high heat.
Pat pork chops dry with paper towels and season liberally with salt and pepper on both sides.
Place pork chops in pan and cook about 3-5 minutes per side, or until browned and cooked through. Keep warm.
Remove pan from heat and rinse (optional)
Return pan to heat and add another drizzle of olive oil over medium heat.
Add garlic and ginger, and cook until fragrant (about 30 seconds).
Add water, jam and soy sauce. Simmer until the sauce has thickened (3-5 minutes).
Turn off heat and add the butter and sriracha.
Return the pork to the pan and coat with the sauce.
Serve immediately with an extra drizzle of sauce if desired.
