Preheat oven to 350°
Wash, peel and finely dice apple. Set aside.
In a large bowl (or bowl of a stand mixer), beat softened butter, sugars and egg until light and fluffy.
Add applesauce and lightly mix.
Add cinnamon, baking soda, baking powder, flour and salt and mix just until incorporated. Do not over mix!
Stir in cinnamon chips, walnuts and diced apple until evenly distributed.
Scoop by rounded tablespoonfuls 2 inches apart onto greased baking sheet.
Bake for 18-20 minutes or until edges have set and are lightly browned.
Allow to cool for 5 minutes on pan before removing to rack to finish cooling. Store in airtight container on counter or refrigerator.
Yield: 26-28 cookies
