Harvest Apple Cookies

Ingredients

  • 1 ½ c all purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • 2 tsp cinnamon
  • ½ c butter softened
  • ¼ tsp vanilla
  • 1 egg
  • ¼ c granulated sugar
  • ¾ c packed light brown sugar
  • 6 tbsp unsweetened applesauce
  • ½ cup each walnuts, cinnamon chips and diced apple

Instructions

  • Preheat oven to 350°
  • Wash, peel and finely dice apple. Set aside.
  • In a large bowl (or bowl of a stand mixer), beat softened butter, sugars and egg until light and fluffy.
  • Add applesauce and lightly mix.
  • Add cinnamon, baking soda, baking powder, flour and salt and mix just until incorporated. Do not over mix!
  • Stir in cinnamon chips, walnuts and diced apple until evenly distributed.
  • Scoop by rounded tablespoonfuls 2 inches apart onto greased baking sheet.
  • Bake for 18-20 minutes or until edges have set and are lightly browned.
  • Allow to cool for 5 minutes on pan before removing to rack to finish cooling. Store in airtight container on counter or refrigerator.
  • Yield: 26-28 cookies
