Preheat oven to 400°
Line a sheet pan with foil and place broccoli in an even layer. Cover with a drizzle of oil and season with salt and pepper.
Roast broccoli for 30-40 minutes or until it is tender.
While broccoli is cooking, bring a large pot of salted water to a boil.
Add pasta and cook according to package directions; drain and return to pot, then add two tablespoons of butter (optional).
In a medium sized pan, heat a drizzle of oil and cook ground chicken until cooked through; breaking into small pieces. Drain.
Cube the Velveeta and add to the cooked pasta. Add spices, milk and chicken broth concentrate and heat over low heat until cheese has fully melted.
Add in cooked chicken and broccoli and gently stir to combine. Remove from heat and serve!
