Blueberry Baked Oatmeal

Delicious blueberries and warm cinnamon come together in this make ahead recipe. Sure to be a hit with the kids!

Ingredients

  • 1 ½ c quick oats
  • ¼ c packed light brown sugar
  • c granulated sugar
  • ¾ c unsweetened vanilla almond milk
  • ¼ c unsalted butter melted
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ¼-½ c blueberries fresh or frozen
  • 5-6 tsp blueberry preserves

Instructions

  • Preheat oven to 350 °
  • In a large mixing bowl, combine first nine ingredients until well mixed.
  • Stir in blueberries.
  • Drop teaspoons of blueberry preserves in rows, evenly spaced apart.
  • Using a butter knife, gently swirl the preserves throughout the oats. (do not stir)
  • Bake for 20-25 minutes or until lightly browned and set. (will firm a little more as it cools).
  • Cool slightly before cutting, or cool completely and cut into squares to wrap and freeze.
